I have a new favourite programme. Lorraine Pascal’s, Baking Made Easy on BBC 2 does exactly what it says on the tin. Lorraine (in a mildly irritating manner, it has to be said) presents lots of delightful recipes to wow your friends and family but with minimum effort. It’s two episodes in and so far of the thirteen different things she made, there is one I wouldn’t at least be tempted to try my hand at (although I would make some ingredient substitutions – I find her penchant for figs disturbing).

So far though, the stand out recipe for me has been her aptly titled “I can’t believe you made that” cake. It is a basic (but nonetheless yummy) chocolate sponge covered in chocolate butter cream icing. It’s the presentation though that I really swooned for. Lorraine decorated the sides of the cake with chocolate cigarellos – don’t sweat you can order them on the internet and covers the top with a huge mound of rasberries. Chocolate, covered in chocolate surrounded by chocolate and topped off with berry delights – what’s not too love. I can’t wait to try it out.

It struck me though that for brides looking to save money and with a friend or relation happy to whip this up on the morning of the wedding, the recipe could make a stunning wedding cake. By making two or even three of these cakes and displaying them on stepped cake stands, these would look pretty impressive. If you wanted it to look more weddingish, you could simply use white chocolate cigarellos and top with white chocolate roses (don’t worry you can also buy those on the internet).
